What is the right temperature and brewing time?

Green Teas

Green Teas, such as Jasmine, Sencha and Gunpowder Pinhead, require the water temperature to be between 50° and 90°. The steeping time is normally 1-2 minutes for Japanese Green Teas, and 2-3 minutes for Chinese Green Teas. Japanese tea leaves tend to be smaller than Chinese tea leaves, and so their flavour is released quicker.

Black Teas

Black Teas, such as Earl Grey and English Tea, require the water to be almost boiling in order to get the full flavour, and are usually steeped for around 3 minutes.

White Teas

White Teas, such as Pai Mu Tan require a water temperature of 76-85°. Most White Teas have a recommended steeping time of 5-8 minutes, whilst others can be left for up to 15 minutes in order to extract the full flavour.

Puerh Teas

Puerh Teas, sometimes known as Pu-Erh, are aged to have a mellow, earthy character, and can be aged for up to 50 years. These teas are often classified by the year and region of origin, much like wines are. The optimum temperature for Puerh teas is around 95°, and the steeping time is as short as 12-30 seconds.

Getting the right balance of temperature and steeping time is important, otherwise the tea won’t taste right. Getting the temperature or steeping time wrong will ruin the drink, and can spoil your enjoyment of the type of tea. Maybe you’ve tried different sorts of loose gourmet tea, and not enjoyed it. Perhaps this was down to the fact that the water wasn’t the right temperature, or the tea wasn’t brewed for the right length of time.

If you drink different types of tea during the day, or if different family members like different teas, then remembering to change the water temperature and brewing time for every cup can be a challenge.

Le Lacheur is widely credited in Costa Rica as having transformed the economy of this Central American country by establishing a direct regular trade route for Costa Rican coffee growers to the European market, thereby helping to establish the Costa Rican coffee trade and development of gourmet coffee in Costa Rica. He set up the market and the trade routes that allowed the coffee business to bloom and flourish.

Little is known of his education and upbringing. At a young age, he went to sea, working his way up to become the captain of his first ship, St George in 1827.
William married Rachel de Jersey (1798–1882) in parish church of the Forest, Guernsey on 19 May 1828. They had five children: Rachel, Emma, Amelia, John and Louisa

The Start of Costa Rica gourmet coffee and coffee trade
After sailing for 3 years and building a good shipping route and building up some capital to expand his shipping business he decided to expand his business.
In 1830 he entered the Azores fruit trade with the ship Minerva. By 1836, he had formed a company Le Lacheur & Co, which owned two ships: Minerva & Dart. Over the following years, he continued to add to his fleet, and seek out new markets. In 1841, Le Lacheur took delivery of the barque Monarch. The Monarch was a much larger vessel capable of journeys further afield. During a stop at the port of Mazatlan, on the Pacific coast of Mexico, he learnt from the British Consul of the difficulty that the Costa Rican coffee growers were having in finding a market for their produce.

Since their independence in 1839, Costa Rica found no regular trade routes for their coffee and European markets. This was compounded by transportation problems. The coffee-growing areas were located in the central part of the country, and it was impossible, because of the mountains and the rainy forest, to send the coffee to the Caribbean Sea and therefore to the Atlantic. It was a lot easier to ship the coffee to a Pacific port, Puntarenas, and to sail around Cape Horn to the Altlantic. It was before the Caribbean railway from San José to the Caribbean and the Panama Canal were built.

William saw a business opportunity, and agreed with Costa Rican coffee growers to establish a regular service to carry their coffee to London. In 1843, the Monarch arrived in the Costa Rican port of Puntarenas, and loaded the first cargo of nearly 5,000 bags of coffee.The venture was a success, and he began increasing the size of his fleet to accommodate the increasing demand for coffee in London. During the rest of the 1840s, he diverted his other ships from the fruit trade to the coffee trade. Then starting in 1850 he commissioned the construction of five ships designed especially for the coffee trade. During the 1860s, a further seven ships were added to the fleet.

In addition to his contribution to the Costa Rican economy through establishing trade routes, Le Lacheur made a significant impact on the development of a number of other aspects of Costa Rica. Le Lacheur, a devout Christian, was appalled by what he described "the lowest form of the Roman faith" being practised where superstition took precedence over true religion. Through the British and Foreign Bible Society, he obtained and distributed Spanish Language bibles, thereby introducing Protestant faith into Costa Rica. As a result he distributed 3,500 bibles in Costa Rica, and was presented with an inscribed Imperial Quarto Bible by the Bible Society in recognition of his achievements.

In 1864, the year after Le Lacheur's death, it was resolved to build the first Protestant church in Costa Rica. It was made of pre-fabricated iron, was carried to Costa Rica by Le Lacheur's son John and was assembled in San José as the Church of the Good Shepherd. It became unofficially known as the 'Iron Church'. When it was rebuilt in 1937 with more traditional materials, a memorial plaque was erected to Le Lacheur with an inscription which includes the phrase ' by whose exertions public Protestant worship was established in this Republic '.

Once Le Lacheur had established a fleet of ships that were regularly making journeys between Costa Rica and London, he arranged with several Costa Rican families to take their sons to England for their education. This has been cited as a contributing factor to Costa Rica's economic success.

This arrangement was also responsible for the introduction of the game of football to Costa Rica. Through this Le Lacheur has also been credited with contributing to Costa Rica national team qualifying for the 2002 FIFA World Cup[1].
Army and Defense of Costa Rican

When William Walker, an American filibuster, attempted to invade Costa Rica in 1856, the Costa Rican government declared war. However, the march from the Costa Rican military base in San José to the northern border was an arduous one. Le Lacheur put his ships at the disposal of the Costa Rican military commanders to transport the army up the coast to the border so that they would arrive fit and ready to fight. As a result, they successfully repelled the filibusters.[2]

He is buried in Highgate Cemetery in London. There is a Memorial to Captain William Le Lacheur of Guernsey in the Church of the Good Shepherd, San José, Costa Rica. Postage stamps have been issued commemorating his achievements by both his native Guernsey (1997) and Costa Rica (1963).

A literal-minded hack in the Food Standards and Labeling Division of this thankless ministry was suddenly inspired with the thought that the name Bristol Milk contravened Regulation 1 of the Defense (Sale of Food) Regulations and misled the gullible public as to the nature, substance, or quality of a food or in particular as to its nutritional or dietary value, as it had no connection whatsoever with a cow, even though, no doubt, it could be used for making a syllabub.

But that had not occurred to him. There came into the bureaucratic mind the horrific image of an inept nanny filling her charge\'s little bottle with an alcoholic beverage from distant Spain, not even a decent, British sherry. When, with unkind logic, Harvey\'s sug­gested that if Bristol Milk were illegal, then so, surely, was Bristol Cream, and if so there would have to be a general and widespread purge of shaving creams, hair creams, face creams, vanishing creams, boot creams, perhaps even Cream of Magnesia, and certainly all the lesser creams, the literal mind of the ministry could only reply that it was discussing regulations pertaining to the sale of food only.

The answer opens up an endless realm of speculation: what, for instance, of the unfortunate child who asks for a taurine optic and is given a mere peppermint confection? Warner Allen was moved to poetry:

A Book of Verses underneath the Bough,

A Jug of Wine milk\'d from the Sherry Cow—

And Thou beside me in the Wilderness....

Who could that mysterious Thou be, the fair, the chaste, and unexpressive she? The unnamed Milkmaid of the Sherry Cow? Surely not the then reigning Ministress of Food? No, the rhyme of my delirium went off the lines.

And, someone like this has no idea about how exciting it is to experiment with tea to discover, among other things, which varieties are excellent iced in a tall glass as well as hot in a delicate bone china cup. Add to the tea varieties the array of flavored teas, and you could just about sample a different variety every day of the year.
I am an iced tea devotee. I have practically made a hobby out of testing just as many different teas as I can get my hands on. Testing them as iced tea, not hot tea. I can't say that any of them have been too bad - even the varieties which are not usually served as iced tea.
As it is getting close to summer, I can thoughtfully reflect that this is the best time of year to enjoy iced tea. And, fruit-based teas just seem to go along with summertime nicely. So, I have been sampling and testing as many different fruity teas as I have been able to either find locally, or order online. And, I've found one that is most definitely going to go on my top 10 All-Time Favorites list.
It's Honey Pear tea. It's an amazingly delicious choice that can't help but stand out among its many rivals in the tea time tests. I tried the Honey Pear black tea, and was blown away. It was superb! An extremely high quality black tea that would have been stunning all by itself, mixed with the flavor of lovely ripe pear and golden honey.
The taste was as sweet as you would expect with two sweet ingredients such as honey and pear, but surprisingly bold... definitely not a "wimpy" tea! This tea is wonderful iced, and holds its bold flavor even after some of the ice melts and weakens it a bit. Truly a winner in iced tea taste testing! I would imagine that if one of those anti-tea naysayers could sample a bit of this tea, they just might change their mind about tea being bland.
One thing I noticed about the Honey-Pear tea that really pleased me was the fact that you can use the leaves for more than one infusion, and the second go around is just as strong and just as tasty as the first. That I like, because a high quality Honey Pear tea is not exactly inexpensive! The ability to get more than one "round" out of it makes the cost well worth it.
So many people think it is difficult to make good iced tea. And, so many people have difficulty making good iced tea, especially in restaurants! Not so much in the Deep South, though, as in the rest of the country. But actually, it's not difficult at all. Basically, if you know how to boil water, you can make good iced tea. Yes, it's really that easy! And this Honey Pear iced tea is so delicious, you certainly don't want to make it the wrong way so that it would possibly turn out to be unfit to drink!
You can use the same equipment that you use to make your hot tea, if you want. By that I mean a kettle for boiling the water, and a teapot for steeping the tea. You will also need some sort of pitcher for iced tea.
A glass pitcher is the best. Though there are many nice looking plastic pitchers out there, I always worry that they might somehow impart a rather "plastic" taste to the tea - something that glass will never do.
You'll want to boil about a quart of water to make around four cups of Honey Pear iced tea. Place five rounded teaspoons of the loose Honey Pear tea leaves in the teapot's infuser. Once the water has come to a boil, pour it over the tea. Allow it to steep for about ten minutes. Yes, that seems like a long time, but I have found that ten minutes is necessary in order to get the right amount of honey and pear flavor.
Once the tea has steeped to your satisfaction, remove the infuser. Add just a little sugar, probably around half a cup, more or less, or enough to suit your own taste. Add one cup of cold water and stir. Let cool just a little, then pour over ice and enjoy!

The majority of this production is done in the world famous region of Tuscany. Tuscany can be found right in the center of Italy. The famous fashion capital Milan is far to the north, near the borders of France and Switzerland, while Rome is a little to the south. Tuscany is a jewel set between the Tyrrhenian Sea on the west and the Apennines mountain range on the east. It consists of ten provinces, one of which is Pisa. A city famous for it's Leaning Tower. The capital city is Florence.

Wine making in Tuscany is just as historic as Italy's architecture and art. A history that extends as far back as the beginning of time.

Everybody has heard of the well-known wines such as Chianti from Tuscany, Valpolicella and Soave, but what about the marvelous Rondinella, Malvasia and Sangiovese? These are marvelous wines, and the little known Malvasia is superb. There are more different types of vine grown in Italy than any other country, and Italy can truly be awarded the accolade of wine growing country of the world. The French, Germans and all of the New World Australian and American wine producing areas pale into insignificance when compared to Italy. At least for volume.

The Italian vines are said to have brought by the Greeks. “Beware of Greeks bearing gifts” is the saying, but if true then these gifts were welcome and did nothing but good. The success of Italian wine growing is due to its geography and climate. The Apennines run right down the backbone of Italy, with beautiful hot Mediterranean conditions at the bottom ranging to more continental and then a fairly cold climate towards the Alps.

This geography provides every type of climate possible for growing grapes, and the cold loving vines and those larger and juicier grapes that prefer more heat are all well catered for. It never gets too dry, and never gets too wet. Were you to personally design a country and climate ideal for growing just about every variety of grapes, you would end up with Italy.

The first step is simple to say, harder to put into practice. Simply start buying healthier treats and leave the junk in the store.
For most people it's not quite that simple. But once you can manage it, it really does become simpler to eat healthier snacks or to give them to children. There's nothing else available in the house.
So what are the kids supposed to snack on?
You can switch them from chips to baked crackers or pretzels. These can still have some interesting flavors, but be better for you.
Some other ideas take more preparation.
Chop up fruit into a fruit salad, for example. If it will encourage people to eat it, add some yogurt or even whipped cream (if that's what it takes). Certainly much healthier, yet often a very welcome snack.
My children also love frozen berries. They're significantly cheaper than the fresh ones, and the ones I buy at Costco cost less per ounce than those sugary fruit snacks. Yet the kids prefer the berries.
You can also chop up some vegetables. Pay attention to the ones people in your family will actually eat. Don't be afraid to include some salad dressing or hummus as a dipping sauce.
If you have a yard you can even consider growing some good snacking food. Even if you don't have one, cherry tomatoes or other small varieties of tomato don't require a lot of space to grow, yet many children love them as snacks. They can be eaten right off the vine.
If you have a bit more space and a bit more time a fruit tree works well also. The house I grew up in had a plum tree in the back yard. Those were a favorite snack. The ones right off the tree were so much better than the ones that had gone into the fridge.
Frozen treats are always a big hit. A fruit smoothie is one fairly simple idea. Throw frozen fruit, apple juice and some honey into the blender. You decide the exact mix. A banana often goes well in there also, or even a carrot.
You can also freeze yogurt into popsicles. Get a fairly healthy type; many varieties have significant amounts of sugar added.
Nuts are also a pretty healthy snack. They have a lot of fat, but it's generally of healthier types. A nice trail mix can be a lot of fun.
As everyone gets used to snacking healthier, it no longer feels like deprivation to leave out the less healthy foods. You may deal with some grumbling or even feel like complaining yourself at first, but as everyone gets used to the routine and finds their own favorites it should get easier.

Goldilocks Bakery is a Philippine based chain of bakeshops specializing in an assortment of cakes and pastries. It first opened its door to its customers at the year of 1966. It started as a family business at first, in a one-door apartment of a two storey building in Pasong Tamo st. Makati City. It first opened its US branch in 1976, at Artesia, California.
It now has branches not only throughout the Philippines, but also in the United States, which is currently confined to California and two locations in Las Vegas, Nevada, and there are two outlets in Vancouver, Canada, where they cater for the Filipino expatriate communities there.
Today, there are over of 192 branches of Goldilocks Bakery in the Philippines, and are still planning on extending their branches on Naga City, where the founders of the bakeshop are based.
Goldilocks Bakery main product lines include cakes and breads, sweets and pastries. Some branches incorporate a Foodshop, offering Filipino cuisine, including beef, chicken, pork, seafood and vegetable dishes as well as their Thirst Quenchers, such as halo-halo, gulaman, fruit salad and sago.

The Red Ribbon Bakery as we all know is now being owned by one of the biggest fast-food chain in the Philippines and in the world, the Jollibee Food Corporation. The Red Ribbon Bakery started in 1979, 13 years later after the Goldilocks Bakery was founded, in Quezon City along Timog Avenue. In 1984, they opened their first US branch in West Covina, California.
The Red Ribbon Bakery started franchising their business in the later years of 1999. Today, there are more than 194 branches of Red Ribbon Bakery all over the Philippines.
