<title>Atlas Chiropractic Adjustments Treat Hypertension</title>

<description><![CDATA[ Hypertension or high blood pressure is a serious health concern that is very common.  Hypertension is a risk factor that can lead to stroke, heart attacks and aneurysms. Dr. Nygaard explains that there are many types of stress, "Everyone knows about mental stress.  Stress from work, sitting in traffic, losing a loved one, these kinds of mental or emotional stress can cause very real physical problems."<br /><br />Physical stress can be caused by repetitive motions, by sleeping in a bad position or having poor posture.  Injuries like whiplash are also a form of physical stress.  Physical stresses often cause pain that may seem normal due to circumstances but are a sign from the body that something is wrong and should not be ignored.<br /><br />Chemical stress is something people are slowly becoming more aware of.  Toxins and chemicals in our environment constantly assault our nervous system and can affect muscle tone. Cleaning chemicals, pollen and vaccinations are lesser-known offenders.<br /><br />"Whatever the cause, these stresses build up," says Nygaard. "Eventually the body reacts causing subluxations." <br /><br />A subluxation is a stress response. Muscles go into spasm. Spinal bones lock up. And adjacent nerves are choked or chafed. This interferes with the control and regulation of your body. <title>Chiropractic Care and Carpal Tunnel</title>

<description><![CDATA[ You may think that carpal tunnel syndrome is a bone or ligament problem, but that's only half the story.  The National Institute of Neurological Disorders and Stroke (NINDS) states, "Carpal tunnel syndrome occurs when the median nerve, which runs from the forearm into the hand, becomes pressed or squeezed at the wrist."<br /><br />Therefore, carpal tunnel is actually caused when a nerve gets pinched.   Dr.  David Nygaard of Atlas Family Chiropractic in Asheville, N.C. further explains that, "The carpal tunnel is a band of ligaments and small bones in your wrist. Painful symptoms can result when nerves are compressed by a collapse of this nerve ‘tunnel'."<br /><br />Virtually every joint in the body is susceptible to fixations and malfunctions that impair function and range of motion. Trauma, micro-traumas, vibrations and repetitive motions are often culprits.<br /><br />Atlas Chiropractic Treats the Body as a Whole<br /><br />Just as chiropractors work to align the bones of the spine, they employ techniques that can be applied to other joints in the body.  Shoulders, hip problems, knees, ankles and even jaw problems have been shown to respond to chiropractic care.  Familiar with working with pinched nerves, chiropractors align bones in their best possible position.  That, in turn, allows ligaments, and muscles to function properly. Many are surprised to learn that the cause of their wrist problem may be due to functional changes to one or more joints of the neck, shoulder, elbow or wrist", says Dr. Nygaard. <br />Sometimes called the "Double Crush Syndrome," sublaxations in the upper spine can compromise the workings of anything between it and the tip of your little finger. <br /><br />Chiropractic Care is a Non-Invasive Treatment<br /><br />The problem with many treatments for carpal tunnel is that they don't treat the source of the problem.  Some people try to self-treat symptoms of carpal tunnel by wearing a wristband.  While it may alleviate some of the symptoms by adding stability and reducing mobility, it doesn't treat the joint that's causing the nerve to be pinched.  <br /><br />Prescription medications that dull the pain can cause similar problems as left untreated the pain, numbness and tingling associated with carpal tunnel can worsen possibly causing serious nerve damage.   Should damage to the area be severe, surgery might be recommended. <br /> <br />Chiropractic care is a non-invasive alternative to consider before surgery.   By restoring proper motion and alignment and strengthening the surrounding muscles, nerves are allowed to function properly. <title>Smoking Seafood</title>

<description><![CDATA[ Sometime after humans started to cook their food over fire, a great discovery in food preservation was made -- smoking of meats. It was one of the earliest methods to prevent food from spoiling.  If fact, until the invention of refrigeration, smoking was one of the primary means for keeping meat from spoiling, allowing people to store meat for the winter and to transport it over great distances.  This method of preservation is still widely practiced in lesser developed countries, but today smoking is mostly done to impart meat with flavor.<br /><br />Smoking Fish in Asheville, NC<br /><br />In theory, any type of fish can be smoked, but oily and fatty fish are preferred as they absorb more of the smoke flavor and take better to the smoking process.  <br /><br />The cool mountain climate and prevalence of outdoor space in Asheville, NC provide a perfect environment for smoking.  George Baxevanis, and his son Alex, have taken to smoking trout which is prevalent in the streams and rivers surrounding Asheville in Western North Carolina. George is the owner of Fisherman's Quarters II -- a popular family-style seafood restaurant in Asheville.  His son, Alex, grew up in the restaurant industry and is now running a catering business -- ABC catering.  <br /><br />George and Alex shared that they have found a new love for smoking. <br /><br />"We've been experimenting with various methods and recipes. Alex is working to master smoking so he can offer smoked trout and salmon to his clients.  <br /><br />"Currently, I'm working on a recipe for smoked trout fish dip," Alex says.  <br /><br />Hot Smoking and Cold Smoking<br /><br />Smoking methods vary and the smoking of fish is an art form.  Whatever the method, there are some commonalities. First, the fish is treated with salt or "brined." Usually, this is done by soaking the fish in brine which is salt water that may or may not have seasonings in it or by coating the fish with salt.  This cures the fish, drawing out moisture.  Some of the salt will soak into the fish and the combination of the salt absorbing and the moisture being removed prevents bacteria growth that will cause the meat to spoil.  The curing time varies, depending on the size and density of the fish.<br /><br />  Sugar, herbs, spices and sometimes liquor are used and the recipes used in the second curing create much of the variety that is available in smoked fish.<br /><br />Then the fish is smoked in an enclosed chamber.  The smoking time and temperature vary.  Depending on the time and temperature, fish can be hot or cold smoked. <br /><br />In cold smoking, the fish is smoked slowly at a low temperature between 60-110 degrees F.  Cold smoking does not cook the fish; it just dries it a bit and gives it flavor.  This keeps the fish moist.  Properly cold smoked fish will keep for months.  The most popular type of cold smoked fish is cold smoke variation of salmon known as lox.      <br /><br />Hot smoking happens at a higher temperature that sometimes starts lower but usually reaches a temperature of between 150-180 degrees F for a few hours.  In this process, the fish is at least partially cooked and will keep for a few days in a refrigerator.  Hot smoked fish is firmer and flakier than cold smoked.  <br /><br />Temperature control is crucial as too much heat will dry the fish out before it is properly smoked.  Salmon is the most popular hot smoked fish, but trout, tuna, mackerel, bluefish and sablefish (often sold as black cod) are also common.<br /><br />Hot smoked fish will not cut like lox and will crumble or flake if cut too thin.  Hot smoke fish is best cut into chucks or cubes or flaked apart along the natural seams of the muscles.<br /><br />Wood Choices for Smoking<br /><br />Hardwoods are preferred to soft.  Native Americans of the Pacific Northwest traditionally smoked salmon over alder.  Oak, maple and hickory are other popular choices.  Some people like to mix a hard wood with that of a fruit tree like apple or cherry. <title>Oysters:  A Seafood Delicacy and Culinary Tradition</title>

<description><![CDATA[ It's a mystery as to when people first began eating oysters.  Most likely, they witnessed an animal such as an otter happily opening and eating, what at first glance, looked like a rock.  <br /> <br />Whatever the origins, people have valued oysters as a food source since recorded history.  Particularly prized by early Greek and Roman cultures, oysters are exceptionally nutrient-rich foods that contain protein and carbohydrates. <br /> <br />George Baxevanis, owner of Fisherman's Quarters II in Asheville, NC, emphasized the health benefits of eating oysters - "Oysters are a great source of vitamins A, B [1,2 and 3] and C. Eating half a dozen of oysters gives you a daily dose of many essential minerals as well including calcium, copper, iodine, iron, magnesium and zinc. They are also believed to be powerful aphrodisiacs."  <br /><br />Oyster Varieties<br /><br />Like wine lovers, oyster aficionados have developed their own culture.  The particular region an oyster is cultivated from or farmed in imparts flavor distinctions on the oyster.  Differences in the water quality, its' nutrient composition and sediments found in the oysters' environment give them different tastes so the region or "terrior" the oysters come from is of importance to oyster fanatics.  Oysters, therefore, are often named by the place from which they come.  That said, oysters are usually divided into three types:  flat or European, Pacific, and Virginica which are also called the Atlantic or Eastern oyster.  Pacific and Virginica are the most common oysters found on menus in the states.<br /><br />Atlantic oysters are found from Canada to South America and are renowned for their delicate flavor.  Apalachicola oysters, from Florida, are most-commonly served on the east coast and are among those used at Baxevanis' family-style restaurant.  Other common Atlantic oysters include the Box and Blue Point varieties from Long Island, NY. <br />	<br />Pacific oysters are often larger and have rougher shells, allowing them to thrive in colder Pacific waters.  Pacific oysters have a creamier taste that is more mineral than salty.  Kumamoto oysters are a popular example.  They have a buttery finish and are a good "beginner's oyster" because of their small size and mild taste.  Steamboat oysters are another popular Pacific variety.<br /><br />The Art of Oyster Shucking<br /><br />Oyster shells are tough to open and the skill of opening an oyster known as "shucking" is an art form.  This skill only comes into play if you want to enjoy oysters raw or "on the half shell" as cooking oysters will cause them to open naturally.  If a cooked oyster does not open throw it away, as it is most likely spoiled. <br /> <br />To open oysters for raw consumption you need an oyster knife and an oyster glove.  Oyster knives have a blunt tip and usually a slight curve before the tip.  Never use a sharp tip knife to open an oyster as they easily slip or break and can cause you to injure yourself.  This is where gloves come in handy.  Shuckers often wear a glove that is similar to chain armor. <br />   <br />Now, hold the oyster with the curved side down and hinge pointed toward you.  Insert the knife near the hinge between the two shell halves.   Rock the knife slightly side to side as you push in.  Work the tip of the knife into the oyster about half an inch.  Twist the knife handle to pop the oyster open.  Next, slice the tissue that connects the oyster to the top shell.  After opening the top shell, cut the oyster from bottom cup.  Try not to mangle the oyster and flip it over in the curved half of the shell to make it look nice.<br /><br />Calabash Seafood, Asheville style<br /><br />Calabash seafood is popular, worldwide, for its' generous portions and easy going home-style feel. <description><![CDATA[ Headaches can be caused by spinal problems.<br /><br />Headaches are a common ailment, but they're not normal.  Headaches are a sign that something is wrong with your body.  The three most common causes of headaches are: physical trauma, emotional stress or chemical toxins. Sometimes there may be a combination of factors.<br />  <br />Treating headaches with drugs that numb your nervous system can cause side effects such as kidney failure or liver damage and they don't correct the underlying cause of the headache.  Using drugs to deal with pain can cause a person to ignore health problems that will only get worse without treatment.<br /><br />One common cause of headaches is from spinal bones in the neck that aren't supporting the head properly.  Some people are surprised to learn that their headaches are being caused by problems in their lower back.  The spine helps to support the weight of the head.  If bones are misaligned in the lower back, the upper spine compensates, shifting the head off center causing stress that can lead to headaches.  A symptom of this problem is a reduced ability to turn your head that due to gradual onset often goes unnoticed. <description><![CDATA[ Lower back pain can be one of the more painful experiences a person can have.  Pain that starts in the lower back and runs through the buttocks, down the spine and into the leg is a possible sign of sciatica.  Other symptoms of sciatica include numbness and tingling. The sciatic nerve is the longest in the body, running from the pelvis through the hip and down each leg.  The sciatic nerves and its' branches control the muscles in your legs and provide feeling to the legs and feet.  Sciatica is a term used to refer to pain that comes from disruptions to the sciatic nerve.<br />    <br />The intensity of sciatic pain can vary from a mild ache to immobilizing pain.  Sharp pain, burning sensations or a sudden wave of pain similar to being electrocuted are common.  Pain often worsens over time and normal activities like sitting, sneezing or laying down can become quite painful.  Bed rest will cause the pain to worsen as well.<br /><br />Common Causes of Sciatica <br /><br /> Trauma can cause discs in the spine to move out of alignment pinching nerves.   Dr. David Nygaard of Atlas Family Chiropractic in Asheville, NC explains the cause of sciatica: "Much of the time sciatica is caused by a bulging or herniated lumbar disc.  Inflammation, tightness or spasms of the piriformis muscles that lies over the sciatic nerves puts pressure on the nerve and can also cause sciatic pain.  It's easy to trace some spinal problems to an event, such as a car accident. Yet, sciatica is often the result of cumulative damage. <description><![CDATA[ Spinal injuries are among the most painful and disabling traumas a person can experience.  The central nervous system, housed within the spinal column, provides a vital link between the brain and the rest of the body.  Disruptions to natural position of the spinal column, including the neck, can cause a wide array of problems that if left untreated can worsen and affect other parts of the body.<br /><br />Atlas Orthogonal Care: Advanced Chiropractic Treatment<br /><br />Years of clinical research in the chiropractic field have shown that many problems associated with misalignments in the spine can be addressed by treating the atlas vertebrate.  The atlas vertebrate is the cervical bone on the top of the spinal column that supports the weight of the head.  This tiny bone is the link between the skull and the rest of the spinal column and, therefore, can determine the alignment of the rest of the spine.<br /><br />Dr. David Nygaard, founder of Atlas Family Chiropractic, in Asheville, NC explains why the atlas vertebrate is so important to spinal health. He says that, "The human body naturally balances the head over the center of the feet.  A misaligned atlas will cause the head to tilt. This causes a chain reaction.  The spine will shift to support the weight of the head.  This causes stresses and strains to the rest of the body."<br /><br />Orthogonal means a 90-degree relationship, meaning the center of the head is over the center of the neck - with the atlas being perpendicular to a neutral or proper alignment of the atlas bone.  Misalignments in the spine cause inflammation, can pinch nerves and lead to pain, numbness and other nervous system disruptions.  When the atlas is properly aligned, the rest of the spine will follow suit, allowing the body to heal itself.<br /> <br />Atlas Care Heals Whiplash and other Neck Injuries<br /><br /><br />Some neck injuries occur due to what is referred to as "repetitive micro-traumas."  These small traumas, like poor posture or bad sleeping habits, can cause the atlas and other vertebrate to become misaligned.  More often, neck injuries are caused by traumas such as car accidents, sports injuries, head trauma and falls.<br />  <br />A 2006 report in the Journal of Whiplash and Related Disorders reports that "in a motor vehicle accident, extreme kinetic energies 11-15 times greater than the force of gravity can cause the individual vertebrate to shift."<br /><br />Dr. Nygaard gives an example of what these kinetic forces can do to your spine: "Think of your spine as a spring.  It's used to support the weight of your body.  It can stretch, compress and even rotate to a degree.  When trauma, like whiplash occurs, the spring can become kinked, overextended or twisted." <br /><br />The same report focuses on the use of SCALE (Stereotactic Cervical Alignment) methods to treat neck and spine injuries.  And, when these methods are incorporated as part of Atlas Orthogonal Care, they prove highly effective in relieving pain, returning a full range of motion and allowing the spine to return to a healthy posture.<br /> <br />Atlas Care: Accurate Analysis with Gentle, Effective Correction<br /><br />After an extensive evaluation of the patient, extremely precise 3D X-rays are taken of the head and neck.  These X-rays allow the Orthogonist to develop a treatment protocol for accurate, individualized adjustments. <description><![CDATA[ ADHD: A Common Diagnosis<br /><br />Often first noticed by teachers, ADHD is one of the most commonly-diagnosed conditions among children.  Most often ADHD is treated with Ritalin®.  However, a recent report on the June 15, CBS Early Show recommended chiropractic as a potential treatment option for children with attention deficit hyperactivity disorder (ADHD).<br /> <br />During the program, medical correspondent Dr. Jennifer Ashton noted that some studies have shown alternative treatments such as chiropractic and dietary changes to be beneficial for children with ADHD. <br /><br />The report stemmed from a recently-released study in The American Journal of Psychiatry suggesting that children and teens who take stimulants like Ritalin® for ADHD have an increased risk for sudden cardiac death; however, the FDA says the study has major limitations. <br /> <br />Parents Turn to Chiropractic Care<br /><br /><br />When asked about the use of drugs to treat ADHD, Dr. David Nygaard, a chiropractor who practices in Asheville, North Carolina said, "Ritalin® is a schedule-II controlled substance related to, and producing similar effects as, amphetamines and cocaine. The side effects include personality changes and permanent changes to the brain.  This has many parents rightly concerned and wisely seeking alternatives. More and more parents are turning to chiropractic care."<br /><br />As Dr. Ashton stated, making nutritional and lifestyle changes can positively impact those who suffer from ADHD.  Dr. Nygaard recommends ruling out any environmental factors by reducing your child's exposure to some common substances.  "Remove food dyes, preservatives and additives from the diet.  Focus on natural, organic foods grown without pesticides or herbicides.    Then determine if an allergy could be involved such as dairy or gluten and eliminate any allergens from your child's environment.  Eliminate all sugars and artificial sweeteners.  Reduce the use of cleaning agents, detergents, fabric softeners and other chemicals.  These are wise choices whether your child has symptoms associated with ADHD or not."<br /><br />Many are now viewing ADHD as a neurological disorder instead of a chemical balance.  Chiropractic care helps to reduce any disturbances in the nervous system allowing the brain and body to function normally.  Dr. Nygaard has noticed a connection between atlas or upper cervical misalignment and ADHD.  "We almost always see problems caused by spinal distortions in the neck, and at the base of the skull at the atlas level."<br /><br />A chiropractic examination can reveal any spinal distortions.  Over time chiropractic adjustments can reduce or even resolve spinal problems reducing strain on the nervous system safely without the use of drugs.<br /><br />Asthma: Spinal Health Improves Breathing<br /><br /><br />Equally alarming as the rate of children diagnosed with ADHD is the number of children developing asthma. Spinal problems in this area can have a profound effect on the nerve supply to the diaphragm. Reducing subluxations in the spine can help to restore proper nervous system control of the lungs and improved function can begin. He is now the Corporate Executive Chef for Adapt Core's two restaurants, The Kingsport Grocery and BONE FIRE Smoke House. Adapt Core is an umbrella organization that oversees an array of projects, including restaurant consulting, commercial and residential general contracting, event promotions and business development. <br /><br />Prior to and during his time working with Adapt Core, Soll has worked to perfect the art of smoking and creating authentic Southern BBQ.  And, BONE FIRE Smoke House, located in Kingsport, TN, a down home BBQ joint that serves "real food to real people;" is the perfect showcase for Soll's talents. <br />Chef Soll, a culinary world veteran, is self taught and has traveled the country honing his skills. And, the name "Soll" ironically reflects the type of food he has come to master -- soul food. <br /><br />At BONE FIRE Smoke House, Soll relies on a Southern Pride smoker. The smoker operates at a frenetic pace -- 24/7; 365 days per year -- to keep up with demand.  <br />Briskets and pork butts are smoked for at least 13 hours.  They are then smoked at a low temperature using red oak. The smoker is then cleaned out and a layer of flavorful fruit wood is used to infuse smoke over and into ribs, chickens, turkeys and vegetables. <br /><br />Award-winning BBQ<br /><br />Chef Soll and his BBQ team took "Best in Show" at the Second Annual Racks by the Tracks BBQ and Blues Festival in downtown Kingsport. <br />When it comes to BBQ, Chef Soll likes to keep it simple. All plates come with two sides and corn bread. Entrees include award-winning brown sugar dry-rubbed ribs; pulled pork; pulled chicken; smoked turkey; and smoked brisket. The sauces are equally direct and straightforward. <br /><br />"We create and experiment with different flavors that we think will complement our basic ribs -- brown sugar rubbed, Soll says. "Currently, on our tables we offer the Razzle Dazzle, a raspberry and habanero pepper sauce; a vinegar-based cayenne pepper sauce; and the house sauce -- a tomato-based sauce that is sweet and savory. <br /><br />In lieu of Soll's culinary achievements, he was recently nominated to compete in the LIVE with Regis and Kelly's "Ultimate Hometown Grill Off" where he will showcase his newest creation -- Fighting Irish Whiskey Sauce Ribs. <br /><br />A conversation with Chef Soll <br /><br />Who is your culinary hero? I have three: James Beard, Graham Kerr and Dom DeLuise. One showed me how to cook; one taught me about different wine choices; and one showed me how to laugh and cook at the same time. <br /> <br />What are your favorite cooking techniques? One pot meals in the oven, stovetop, grill and smoking!<br /><br />If you could sit down and eat and talk with anyone about food who would it be? Family, friends and neighbors because they are always honest with me and give me ideas about how I may improve.<br /><br />What three ingredients could you not live without? My desire, my integrity, my family and garlic…oops that's four. Following direction is not my strong suit.<br /><br />What are some of the most popular menu items? Our ribs, of course. A 2" Kobe steak, grilled white asparagus with hollandaise and herb roasted potatoes with grilled portabella mushrooms. I'd end up with chocolate chip cookies and milk. Fava beans and a nice Chianti might be good too!! <br /><br />What is your greatest culinary achievement?  To be given the opportunity from Adapt Core to not only be its Executive Chef to one, but two restaurants; a third is on the horizon. I also enjoy consulting for other restaurants.<br /><br />Do you buy local when possible? What are your thoughts on the farm to table movement and sustainable agriculture?
