As the summer comes to an end and kitchens get cooler, the cravings for apple, cinnamon spice strudel and comforting, warm fruit desserts flare up. There is just something irresistible about a Sunday afternoon snack with good friends and family or ending a meal with a taste of sweetness.

Warm desserts can be eaten any time of day. A piece of berry cobbler can warm heart and soul after a long walk admiring the pretty, bright fall colours in the park and nobody will push aside oven-roasted pineapple fritters with hot butter sauce when returning home from skiing in the mountains all afternoon.

Cooking and baking is not a talent people are born with. It has to be acquired. Mothers often teach their children how to clean vegetables, fry and egg and bake cookies, but not all kids enjoy kitchen activity. They would rather go out with their friends, listen to music or play video games. Many parents today would love to give their teenagers a culinary education, but simply do not have the time. Life in the 21st century is expensive and they have to work to support the family. When they come home they have barely time to cook a meal, let alone make fancy desserts.

Last, but not least, are the individuals who have never shown a great interest in experimenting with foods, and their oven is sparkling clean for the simple reason that it has never been turned on. Those are the folks relying on restaurant, take-out and dinner invitations, until one day, they decide to turn their life around and give ‘cooking' a try.

There are many reasons why people suddenly start showing an interest in food preparation. They may want to spark romance and impress a new lover, improve their eating habits, or are in need of a new and exciting hobby. Whatever the motivation, the incentive to enroll in a cooking class should always be applauded.

Desserts are typically the part of the meal everyone looks forward to and often feel like a reward for surviving the previous courses. How many times do parents have to repeat: "If you want dessert, finish your plate!" In most cases it works and even if the dish is not totally clean, at least an effort is made to eat more.

It is amazing what some people will do for their favourite dessert, and believe it or not, that may not always be ice cream. Especially during the colder seasons, many families will gather to enjoy delightful warm-from-the-oven desserts. These can include a chocolate soufflé conjuring up feelings of decadence and luxury, or an upside-down apple tart drizzled with caramel sauce. Frankly, I would not turn it down either, nor would I push aside a taste of Pear Tarte Tatin, lightly drizzled with lemon zest.
Many home-cooks are afraid to try these fancy desserts with foreign names. They may have reviewed the recipe, and even if it seemed easy and straightforward, may have still turned it down. Nobody wants to fail and be disappointed and luckily, nobody has to. That is why there are hands-on "warm dessert" short courses, so anyone who likes to fancy up their meals can do so.
